Iranian cuisine ( Persian: آشپزی ایرانی, romanized: Āshpazī Irānī) are the culinary traditions of Iran. Due to the historically common usage of the term " Persia" to refer to Iran in the Western world, [2] [3] [4] it is alternatively known as Persian cuisine, despite Persians being only one of a multitude of Iranian ethnic groups who have contributed to Iran's culinary traditions. [a] After the Mongol raid and fall of the Abbasids, Sunni hierarchies faltered. Not only did they lose the caliphate but also the status of official madhhab. Their loss was the gain of Shia, whose centre wasn't in Iran at that time. Several local Shia dynasties like Sarbadars were established during this time. [ citation needed] Darius' first capital was at Susa, and he started the building program at Persepolis. He rebuilt a canal between the Nile and the Red Sea, a forerunner of the modern Suez Canal. He improved the extensive road system, and it is during his reign that mentions are first made of the Royal Road (shown on map), a great highway stretching all the way from Susa to Sardis with posting stations at regular intervals. Major reforms took place under Darius. Coinage, in the form of the daric (gold coin) and the shekel (silver coin) was standardized (coinage had already been invented over a century before in Lydia c. 660 BC but not standardized), [42] and administrative efficiency increased. Iran's traditional coffee ( qahve, or kāfe) is served strong, sweet, and "booby-trapped with a sediment of grounds". [62] In 16th-century Safavid Iran, coffee was initially used for medical purposes among the society. [63] Traditional coffeehouses were popular gatherings, in which people drank coffee, smoked tobacco, and recited poetry—especially the epic poems of Shahnameh. [64] In present-day Iran, cafés are trendy mostly in urban areas, where a variety of brews and desserts are served. [62] Turkish coffee is also popular in Iran, more specifically among Iranian Azeris. Persian has six bold whiskers that give it a look of toughness. The whiskers sense air movements to determine what is in the Pokémon’s surrounding vicinity. It becomes docile if grabbed by the whiskers. Saeed Kamali Dehghan (25 June 2012). "Iranian pair face death penalty after third alcohol offence | World news". The Guardian. London . Retrieved 11 June 2013. The founder of the dynasty, Tughril Beg, turned his army against the Ghaznavids in Khorasan. He moved south and then west, conquering but not wasting the cities in his path. In 1055 the caliph in Baghdad gave Tughril Beg robes, gifts, and the title King of the East. Under Tughril Beg's successor, Malik Shah (1072–1092), Iran enjoyed a cultural and scientific renaissance, largely attributed to his brilliant Iranian vizier, Nizam al Mulk. These leaders established the observatory where Omar Khayyám did much of his experimentation for a new calendar, and they built religious schools in all the major towns. They brought Abu Hamid Ghazali, one of the greatest Islamic theologians, and other eminent scholars to the Seljuq capital at Baghdad and encouraged and supported their work. [67]Meftahi, Ida. Iran, with its long history of early cultures and empires, had suffered particularly hard during the Late Middle Ages and the early modern period. Many invasions of nomadic tribes, whose leaders became rulers in this country, affected it negatively. [5]

One of the traditional and most widespread Iranian spices is saffron, derived from the flower of Crocus sativus. According to Mortaza Motahhari the majority of Iranian scholars and masses remained Sunni until the time of the Safavids. [100] The domination of Sunnis did not mean Shia were rootless in Iran.
